This coffee is grown by smallholder farmers in the woreda (district) of Kochere, southwest of the town of Yirgacheffe, and processed at the Chelchele washing station. Yirgacheffe is the heartland of high quality Ethiopian coffee, and beans from this region are renowned for their complex and distinctive flavour profiles. Kochere coffees in particular are known for their delicate tea-like qualities, citrus or stone fruit notes and complex floral aromas.
Like many Ethiopian coffees, these beans are grown by smallholder farmers - often families with just one or two hectares of coffee growing naturally near their homes. The coffee is grown using traditional methods, under a canopy of trees to shade it from the sun and alongside other crops. Once picked, the coffee cherries are delivered to the washing station for processing to remove the fleshy fruit before being dried in the sun on traditional African raised beds.
After processing, the beans are sold through the Ethiopia Commodity Exchange, which was established in 2008 to protect smallholder farmers from market forces that might otherwise prevent them from making a living. The ECX provides state-funded infrastructure and stability to these farmers, including prompt payment mechanisms, warehousing, grading and trading facilities, as well as access to information about current trading prices and local delivery points.
